    The Dysart Petersham

    Email:

Family owned and run, The Dysart Petersham is driven by a guiding family view, firmly rooted in the shared values of the lead team of manager, Barny Taylor, and Head Chef, Kenneth Culhane: passion for food and wine, commitment to quality ingredients, responsible sourcing, belief in the value of tradition and the role of food, wine and welcome in conviviality. Both are constantly inspired by our surroundings in this country village half an hour from Mayfair and the always beautiful changes it sees through the seasons. It is engrained in both to appreciate and reflect in their decisions: the increasing need, understood so naturally in earlier years more closely connected with nature, for ethical treatment and welfare of animals, thoughtful and natural cultivation of plants, and the wise, thoughtful use of resources; the value of old varieties and breeds and the richness that wild herbs, flowers and plants add to our lives; the role of beauty in enriching life. A concert pianist recently drew to our attention some words of Henry Miller: “Art teaches nothing, except the significance of life” Whether one agrees, or not, this is a wonderful summation of all we hope to help achieve across all the arts, food, wine, music , artworks, nature, conviviality, good company and conversation, with pleasure for all the senses.

    Soil Association certification

A natural partnership between the Somerset countryside, a herd of organic dairy cows, and an environmentally-friendly, energy-efficient, sustainable approach to farming and business. The Coombe Farm Milk Supply Group, or ‘Milk Pool’, is a dedicated collective of organic farmers working closely alongside Coombe Farm’s own dairy farms. The Milk Pool team gives a fully integrated operation and organisation, from the dairy herds to the collection of milk and its delivery to factory, and ensures customers have full traceability and organic quality control of their milk. In addition, the farmers who are members of the Milk Pool benefit from the input of Coombe Farm’s expertise and knowledge, as well as the marketing of the milk they produce. Another advantage is that being a closely-knit operation, the Coombe Farm organisation cuts down on ‘food miles’, giving additional environmental benefits as well as fresher milk. (Link to map of our farms) The Milk Pool’s aim is to be a dairy industry standard-setter at every level, working to the highest levels of environmental and energy conservation, animal welfare and food hygiene.

Our range of award-winning, organic dairy products has earned us an enviable reputation as one of Scotland’s most respected artisan creameries. As one of our earliest work ventures, we started making cheese at Loch Arthur in 1985 from the milk of our two Jersey and two Ayrshire cows. From these humble beginnings our cheeses have become recognised and sought after and are now produced in our purpose built Creamery and sold throughout the UK. As members of the Specialist Cheesemakers Association we are one of many small creameries representing the modern renaissance of artisan cheeses now being produced in Great Britain. Every year since 1991 our cheeses have received awards and accolades in some of the top cheese competitions in the UK. All of our handmade, organic, farmhouse cheeses are produced from the milk of our own biodynamic farm and local organic farms, and are certified by the Biodynamic Agricultural Association (BDAA Organic Certification UK6). They are all produced using vegetarian rennet. Our extensive range of cheeses and dairy products are sold in our own Farm Shop and in fine cheese shops and delicatessens throughout the UK. Our cheeses can also be ordered online. Loch Arthur is part of the Camphill Village Trust which encompasses several communities whose life and work incorporate adults with special needs. The wo
